Roasting Times for a Whole Turkey
The following cook times are approximate. Always use a meat thermometer to check doneness. For a stuffed turkey, the center of the dressing must reach a temperature of 165-degrees. For an unstuffed turkey, the thermometer should read 180-degrees in the thickest part of the thigh (being careful to not touch any bone).

About 20 minutes before roasting time is up, test doneness by using a meat thermometer as indicated above. You may also move the drumstick up and down (use a thick paper towel to protect your fingers); it should move easily or twist out of joint.
When turkey is done, remove from pan and keep warm. Let turkey stand 20 minutes before carving. Carving will be easier and slices neater. (Sources: About.com and Better Homes & Gardens New Cookbook, circa 1953)
